Oven lamb leg

  • Spring onions                   2

  • Star anise                            2

  • Cumin                                   1 tbsp
  • Fennel seeds                     1 tbsp
  • Chilli flakes                         2 tbsp (chilli powders are also ok)
  • Pepper                                   2 tsp
  • Honey                                    1 tbsp
  • Sesame oil                           1 tbsp
  • Salt                                           2 tsp

Cut onions into slices and put together with 2 tsp pepper, 2 star anise, 1 tablespoon cumin, 2 tbsp chilli (use less if you do not like chilli), and 1tbsp fennel seeds in a large bowl

Cook 6tbsp oil in the pan until it smokes a little and pour on the seasoning mix in the bowl

Mix in bay leaves, 2tsp salt, 1tbsp honey and 1 tbsp sesame oil, mix well and let it rest for 2-3 minutes

Cut many large cuts in the lamb so the marinade goes better into the meat

Put the marinade over the lamb

Roast the lamb in the oven at 180 degrees for about 60min
