Mushroom stew

  • Oyster mushroom                             about 100 g
  • King Oyster mushroom                  about 150 g
  • Champignon                                          about 50 g
  • Aroma Mushrooms                           about 50 g


  • garlic                                                           2
  • Ginger                                                        about 5 g
  • Spring onions                                         1
  • Butter                                                         about 30 g
  • Cream Fraiche                                       1 dl
  • Salt                                                               1 tsp

Cut all mushrooms to the size that you prefer, garlic and onions into slices, ginger into strips

Fry garlic and ginger in butter on medium heat for about 1min

Mix in all the mushrooms and cook for 5 minutes until they are soft

Pour into water until it covers approximately 2/3 of the mushrooms and turn up to high heat

When the soup boils, turn down to medium heat and boil for 15 min

Mix in 1 teaspoon salt

Garnish with scallions. At this stage, it tastes good already!

But if you like thicker soup, you can mix in about 1 dl Cream fraiche and boil for another 1 minute
