ingredients:
- Eggplant 1
- Mince meat 100 g
Spice:
- ginger 2-3 g
- garlic 1 boat
- hoisin sauce 1 tbsp
- Chilli 1 tsp
- Spring onion 1
- Whisky 1tsp (Alcohol makes the meat more tender, but it’s not necessary if desired)
Mariner minced meat with 1 tbsp of hoisin sauce, 1 tsp chilli and 1 tsp whisky. Mince the garlic and ginger, cut spring onions into slices
Fry garlic and ginger in oil on medium heat until slightly brown
Mix in the minced meat and fry for about 2 minutes on high heat
Make a large cut on eggplant
Stuff in fried minced meat
Wrap in aluminium foil and place on grill at the warmest place
About 15 minutes per side. It’s done when the eggplant is soft
I had leftover fried minced meat when I filled the eggplant, so I put the rest on noodles at the picnic, yum!
