Spice:
- garlic 1
- scallions 1
- Salt 1 tsp
- Sugar 1 / 3 tsp
Cut potatoes, eggplant and bell pepper into chunks, garlic and scallions into small slices
Deep fry potatoes in oil until golden browned, remove from oil
Fry eggplant until they are slightly brown, remove from oil
Fry onions and garlic in the pan and mix in 1/3 teaspoon sugar and 1 teaspoon salt
Mix in all three vegetables and cook for 1-2min
